Does anyone know how to edit the existing companions in the toolset?  Like say if I wanted to make Bevil a paladin or something.

They are all in the creatures tab, under companions (funny enough) you can edit them to your liking but keep in mind you should not try to edit companions that are meant to be in the actual original campaigns. just simply not a good idea.

If you want to modify the companion I would suggest that you create a new module. Find the global blueprint for Bevil. Make a copy of him to the module blueprints. Make you modifications, and ensure that his tag, ref and all that is the same as the global version. When you copy it, the toolset generally adds a 0 at the end of the ref. Once that you have finished modifing Bevil save the module as a folder. Close the toolset and open the new module folder you have created. Drag and drop the bevil uti from the module folder to the override folder. When you load the game you will have a modified Bevil, but once you remove this file from the override he will return to his original state.
