In a video game I think it's more interesting and realistic for love interests to not have a sex scene. Between technological limitations (the eyes and facial expressions just aren't there yet) and ESRB limitations (ME1 was rated M? Seriously? The same rating as Dante's Inferno?) I'd honestly just rather not see a sex scene in a game.
I thought Kotor handled a "love interest" better in that way, in that there is some sexual tension, interest, conflicting emotions, guilt, etc but that the story of the game doesn't go in the direction of resolving the romance plot.
I didn't dislike the LI in ME1, and the scene was fine, but honestly I could take it or leave it. It always sucks to enjoy the developing dialog between two characters, see it as a positive influence on the story... then have a lame "ending" to the thread. Games are an imperfect medium for this type of stuff in my opinion.
Oh... and just to repeat.... the ESRB is horrible.

I just hope the scene isn't a "BEFORE WE DIE...," again. I'd much rather the romance subplot be resolved in the middle of the story, rather than having it squeezed in at the end.

Treat it like a scene you'd see in an R rated movie. Not necessarily T+A but no lame blackouts either. I didn't mind the engine room scene in ME2 too much though a little more intimacy (re: any intimacy at all) like how the ME1 scenes were would've helped a lot.
In short: tasteful, intimate, and something that fits the story versus whatever rating the ERSB wants to throw on it.
