Depending on your playstyle I'd say any class is the easiest. On the other hand if you are actively trying to make it the easiest run through ever I'd say vanguard is the easiest. This is because you can shortcut a lot of key difficult fights by charging past them. I am not sure you'd have fun like that though. Well except in the tali recruitment end boss fight.

For me it has to be Assault Sentinel the Shield is just too good a skill to pass up.

Sentinel with Assault rifle or Sniper training is unstoppable.

Mattock Soldier using Widow as a heavy weapon is pretty good too.

I find that Infiltrator is by far the most difficult. Tactical Cloak is nothing more than a good way to get into trouble even faster than Vanguard charge. If I ever do an Infiltrator playthrough, it will be without spending any points on Cloak at all, using the Widow, and liberal application of ammo powers and incinerate.

You must spend 3 points (rank 2) in Tactical Cloak to unlock Incinerate. But you may already know that.

I played an infiltrator on insanity. Overall I had a lot of fun. I didn't feel that it was a particularly weak class either. If you get in trouble, it is almost always easy to get away using cloak. The big challenge is using cloak a lot, because it requires a lot of precision and careful flanking. If you don't get it right, you'll have to spend a lot of time regenerating shields.

I would definitely never play an infiltrator without cloak. Just don't see the point in that.

Which is why I don't play it.  Tactical cloak gets me killed way more than Vanguard charge.  I can be a sniper without the inherent fragility of the infiltrator by playing a Soldier anyway.
