Is it the owner of the node, the NPC Speaker, the PC Speaker, or is it defined in some specific and devious way?

I think it is the owner of the conversation (object that has the convo attached to them), or at least they are considered OBJECT_SELF.

Refer to Referencing Objects in Scripts

Lists everything related to convos in there. OBJECT_SELF is the creature the player is talking to per my notes.

As I recall, the object being conversed with (i.e. the creature to whom the dialog template was attached).

So if the conversation was called from the ActionStartConversation() function, the caller of the script or the object that was assigned the action by the function AssignCommand() would be the "owner" of the conversation or the "object being conversed with"?

The creature that was talked to in order to initiate the conversation is the owner (OBJECT_SELF). That is, the owner is the creature whose dialog template is being executed for the dialog.
