I remember that John Epler stated that the final details (polishing the game) are done last.
My first impression upon seeing the DLC was this: delicious. Sebastian is indeed handsome, great accent and the acting is superb (the delivering of the lines: poignant and the music really increased the tension of the situation: awesome). The animations truly depict the interaction of two live people: quite fast and smooth.
My next thought was that maybe the DLC was shot on earlier in the development process or maybe on low resolution. Then I looked at the surroundings.
The interaction took place in a light absent context blocked by the building and by time of day, (It looks like it is in the late afternoon five p.m. onward. A street lamp is lit.), in which nuances of light and shadows would be absent, hence why his (the grand cleric, too) outfit and his features may appear dull. The art style is indeed different.
As for the environment, I cannot really comment upon it and be fair, for I need more than 20 seconds, and that it does not focus on the companion itself.
Edit: Lead Developer, Mike Laidlaw stated we will receive new goodies next month and I am really looking forward to it. Thanks for Sebastian Bioware (Alec Newman is my girl crush) for I know you will do his story justice.
