I was wondering if it is safe to delete some ME2 logs from my documents folder ?
I have uninstalled the game allready.
ME2 install/uninstall logs

The only files I can imagine you wanting to keep are the saves located under the Save folder, and the Player1.prf, which tracks achievments (and perhaps other things). Any other files should be safe to delete.
