I also have the Xbox Slim. The last time I played ME 1 I had my regular Xbox 360. I transfered the data to the new memory on the Slim. The game itself has all my medals, I even got the Distinguished Combat Medal for completing the game on Hardcore. I didn't get the Insanity medal yet, so I made sure the game was ready to be played on Insanity before I started again. I did use a previous character that I did in 2007, so I can get to level 60 and get that achievement. But as soon as I got to Eden Prime, the difficulty went back to Hardcore. I changed it back to Insanity. The first enemies seem easy, but thats probably because of my high level armor and weapons.....
I am mainly worried if I am not going to get the achievement for playing on Insanity since the game changed it on Eden Prime to Hardcore. I qualify to play on Insanity, but Hardcore and Insanity say "needs to be unlocked". Please anybody, let me know if I will still get the achievment in the end if I changed it back to Insanity on Eden Prime. I also hope it doesn't change again. I honestly don't know what is going on.
Picked Insanity difficulty but it went to Hardcore the moment I checked on Eden Prime

Try starting a new Insanity game, with a brand new character, and see if the fault reoccurs. If so, then it would appear to be a problem with the installation of ME. If it doesnt, restart the game with high level character. Go through the startnig options very slowly and carefully in case you accidentally bumped something, or if your controller is a bit twitchy and forced the change through without you noticing.

I believe the last call for setting the difficulty is just before leaving Eden Prime. If it ever gets touched after that, no achievement. So, while I suppose it's a bit worrying that it changed, you're actually fine to have changed it while on Eden Prime.

yeah I am still on Eden Prime, right when you run into Ashley. I am going to play later and make sure its on Insanity (since I left it on there when I turned it off). I just want the achievement. I am not also going to start a new character because I want to take my level 48 character to level 60; and get that subsequent achievement, and then send it over to ME 2. As long as the achievements get noted, ill be a happy Shepard. lol

also I was right in the middle of the line of fire from those bots that are your first enemies and I got shot a fair amount of times, but I didn't like go down in like 5 seconds....is it just that they are the intro enemies on Insanity (they had barriers and usual "health" bar) and they get progressively harder or they are hard already and just with my level 48 character in the beginning with uber armor and weapons is the case?

They are harder because you have imported an "uber" character. The enemies pertty much start off upgraded, where you have to run around and find all the relevant upgrades still.

yeah, lets see how it goes and if the game doesn't change my difficulty post Eden Prime, but ill make sure it stays on Insanity before I leave. Also, I wanted to know if anybody had tips on how to make inventory less frustrating? I know I should just dump things that are low in levels with my 48 character, but I am just wondering if there is any way to make it smoother. I already miss ME 2 because of this. lol

Eden prime being the "intro stage" to the game, you can expect them to be somewhat easy. Later on when you get to the citadel and have to take on various thugs, you should expect them to hit hard, and hit often.

also I double checked the options with the difficulty and it was on Insanity, so I saved it again...I didn't move the difficulty at all from Insanity....so saving the thing again doesn't take away from the achievement right? Only if I move the difficulty reticule.
