The same can be said about Rockstar's previous big game before RDR, GTA 4 and its DLCs. The voicing of Tony Prince would be my favourite there, whoever may have done it.
He was also great as the Transcendent One in Planescape: Torment.Wicked 702 wrote...
Tony Jay. His credits run extremely long (check out IMDB), but I remember him most disturbingly (and fondly) as the voice of the Elder God from the Legacy of Kain and Soul Reaver series. Still gives me the creeps. RIP Tony.
PS:T has some more good voice acting (despite the amount of voicing being rather limited)...like Nordom who is voiced by Dan Castellaneta (best known for voicing Homer Simpson).

Mass Effect 1/2 - The scale and quality of the VA in these games are astounding and are aprt of what really elevates them above other RPG's in production value.
Batman: Arkham Asylum - It has to be mentioned, but it's important to note this is only because they stole many actors from the one of the greatest series of all time: Batman: The Animated Series.
Red Dead Redemption - While the writing has some serious highs and lows throughout the game, the VA is always, always exceptional. John Marston's voice actor does a particularly splendid job.
Portal - GlaDos is hilarious.
System Shock 2 - SHODAN, as many people have said.

I gotta admit. I'm kicking myself for forgetting that, and these:

Claudia Black - Morrigan (Dragon Age Origins) You'd think her performance would be Aeryn Sun 2.0. But it isn't, Black creates a totally new character with a slight variation on her accent. Great job.

Steve Valentine - Alistair(Dragon Age Origins) It's tough to voice a snarky knight with emotional depth, but Valentine pulls it off. One of the best voices I've heard in a Bioware game.

I liked the acting of all three main characters in Enslaved: Odyssey to the West.
This. Not since Mass Effect 1 (or possibly ODST - that comes in at a close second for best voice acting) have I been so emotionally connected to characters in a game. Pigsy, whose character could have been ridiculously cliched due to his plot arc, instead really appealed to me, with his voice acting being the main reason for this. Trip and Monkey's relationship and character development is also the most realisitic and believable in a video game I've seen bar none. Though I suppose the mocap for their faces aiding the excellent facial expressions certainly helped greatly.
Special mentions to Alan Wake, Splinter Cell: Conviction and (many will disagree with this), Terrence Stamp as Truth in Halo 3, mostly for that line he states to Johnson before acting the Halo array - "You are weak, and Gods must be strong" - I thought he was excellent throughout the game but the delivery on that line was chilling.

For individuals:

(who would have guessed?)I was also like to note that i thought Bishop from NWN2 was written and voiced well but I can't find a photo of his VA, Asa Seigel.
For entire casts, most of the cast of Tales of the Abyss was great though I didn't think the best of the script at times. I loved the voices in Drakengard, Dragon Quest 8, the Fatal Frame series, Suikoden 5, and Gears of War.

That is instead of having some professional mocap actors going through some moves and then completely seperately have the voice actors record their lines in a booth with nothing more to go by then some instructions from the voice acting director, they mocap the voice actors themselves as they act out the actual scenes from the game and then have them base their voice acting on that.
Must make it so much easier for the voice actors to give a believable performance.
See this side-by-side mocap/ingame scene comparison from the first Uncharted for example.
(for the Alistair and Morrigan fans, check out the official Uncharted 2 behind the scenes vids on youtube, lots of Steve Valentine and Claudia Black in there)

I can't remember who voiced Double H (BG&E) but I rather enjoyed how Double H came out. I'm kind of hoping for his return in BG&E2...if it ever occurs.
Other than that, I must go with my usual. Jennifer Hale as FemShep and Raphael Sbarge as Kaiden Alenko (I swear...I never even connected him with Carth until someone mentioned it on these forums! Definitely did a different tone for Kaiden

Castlevania: Lords of Shadow - I know some diehard CV fans think this game as not a "true Castlevania game". But I don't care, it's a great game and a lot of it's praise must go to the voice acting, which is some of the best I've heard in a videogame. Notable are:
WARNING!!! SPOILERS BE AHEAD!!!

Robert Carlyle/Gabriel Belmont - A surprise for me. Who knew Carlyle could voice a noble knight with such sadness and regret? Just listen to that epic speech he gives to Satan in the final boss fight.

Patrick Stewart/Zobek - I'll admit it, Stewart hams it up here with his narration. But it works, and it's nice to see him play the villain for once.

Jason Isaacs/Satan - I admit, when I saw his name on the trailers, I thought he'd voicing Dracula. But this one of those times where it's okay to be proven wrong. Isaacs' got the Prince of Lies' malevolent tone down pat, but also infuses him with some vulnerability. The back and forth between him and Carlyle in the final boss fight has got to be one of the greatest voice acting bits in game history.
