This pleases me. I am hoping one of those choices includes long hair, no bangs that reaches the tailbone or a long ponytailed version (similar to Anders, but much longer, obviously). Here's hoping I don't spend too long customising my fem!Hawke only to realise 4-5 hours have passed and I haven't even really started the game.

Wa-wa-wait a second... Does that mean that hair will be somewhat animated? I know you can't go as far they went in The Witcher, but will there be some rudimentary animation, similar to what they have in The Sims? Like bangs or ponytail flowing and such?

As for not being able to otherwise edit the default appearance, it not because we're being mean-spirited or because we don't want to provide the option. It's a pre-rendered face that wasn't made with the regular character creator... and thus the only possibility with it is use/not-use. That's not to say that it couldn't be somehow modded-- that might be possible, but I have no idea how that would work.
I think I was accused of posting a political sounding answer earlier, let me be precise here.
Default Hawke's hair and beard styles are not available for character customization. The default appearances were not really intended for piecemeal use in the character editor (ie: the precise nose and eye and mouth shapes are not available either), it is as was mentioned, a custom modelled head all baked together. This gave the character artists a lot more direct control over how Hawke looked without being restricted to the headmorph system for our title character's appearance.
Now for the good news: There are 32 hairstyles for female hawke (including the bald option), 36 for male hawke (the same number of unique models, but there are a couple more variations of peach fuzz texturing including male pattern baldness which makes no sense to have for females) and 17 beards.
There are no -exact- matches to the default Hawke's hair, however, there are quite a few very similar styles. There is also one similar beard model (though it is a bit longer than the custom one). You can make a very similar looking character to the custom Hawke model, but it is not exact. It would be close enough that you can roleplay age (assuming a character's exact hairstyle and beard length changes a little over the years). This is really one of those things you'll have to see and judge for yourselves because it is a little subjective.
There is a huge range of possibility, there are millions of face variations possible in character generation. If you were to see every combination of hairstyle alone there are 3,311,685 combinations of possible features for the male. Hope you're looking forward to it!

Could you please tell us about the length (something to keep me from going insane as I wait for DAII's release.... Just kidding about that) of "Femme Hawke's" hairstyles ? You said from "bald" can I safely add to mid-back or slightly past her shoulders?

i hope that problem is not present anymore, most of my wardens were forced to be clean shaven or to have a stubble because of this.

PC players were fortunate enough to get a workaround (detailed in the thread linked above), but console players were left high and dry. If Bioware releases a Character Creator we'll know soon enough whether or not beards will take to the skies yet again.

Not usable on custom selections as far as I know. Only a matter of time til someone creates a mod though.
