Have you tried to go to your Xbox Dashboard. My Xbox > System Settings > Memory > Hard Drive > Games > Scroll Down to Mass Effect > Delete Saves ?

Edit: On further investigation, it seems that one can never completely delete all ME information. Which is probably why you aren't getting many answers. (Resource 1 / Resource 2) There are other links to find via google.

I don’t know about the Xbox but, on the PC, the correct way to delete Characters is through the Main Menu. Choose Load Save, and then Switch Careers. You will then see all your Characters and be able to either Choose or Delete the career.

It seems to me that you can’t just delete the Game Saves, because it won’t update your MassEffectProfile file’s information. I already tested deleting a Character this way, and checked in game’s profile information to make sure it was removed. It works, so I hope this post is helpful to you.
