I think she should change if you made her your LI or not.
IF you made her your LI I think she should look very different since she feels like someone actually cares about her now...maybe she let her hair grow and covered up her "Past," (Tats) with clothes..as well as a happier disposition considering the circumstances.
IF you didnt then I say she goes down a darker road...more tats, more scars.
I like her how she is.
Her hair, her tattoos and her attitude.
To change her character that much by having her feel the need to hide her tattoos and suddenly grow her hair so she can be 'normal' would be absolute bull**** and not what I'd want at all.
The only change I'd have is that she'd wear armour when running around in fire fights/on deadly planets, and that'd happen regardless of whether you romanced her.

Yeah. She's not a Barbie Doll. I could see some functional armor for use in combat, but we don't need her to be toned down to more closely fit a stereotypical view of feminine beauty.

I can see why from a character development view this could work, but it would be akin to Miranda shaving her head because she doesn't have to be the perfect woman anymore for the people that matter in her life.ZeroDotZero wrote...

Her default (non loyal outfit) in ME2 is absolutely ridiculous. It's gotten to the point that I'm embarrassed to have someone see me playing ME2 with jack as a squadmate.

Not really: firstly, Jack doesn't have a reason to change her hair either. The entire point behind her romance is Shepard accepts her, like he does with Miranda's path, for what she is. Furthermore, Jack clings to her past and even assimilates it, as evident by the tattooes which mostly (by her own admission) memorials of past events.Noelemahc wrote...
That's an apples vs. dinosaurs comparison there. Miranda wouldn't shave her hair because she wouldn't have a real reason to do so. Having a better sense of self can lead to a Haircut of Extreme Significance, but not of the type you describe. Jack growing out her hair would be a sign of her finally leaving at least some of her past behind, which is what romancing her in ME2 is all about.
So to recap:
>Jack clearly makes the past physically part of her
>The haircut is part of her past
As I said before, Jack suddenly deciding to grow her hair long, while you can see why she'd do it, is like Miranda deciding to shave her head. Again, you can see why she'd do it, but it would be out of character. You yourself point out Miranda wouldn't have a real reason to shave her head; Jack doesn't have a real reason to grow her hair out. Repeating myself again: the entire point to her romance is Shepard accepting her for who and what she is.

According to the article about ME3 in Game informer the game starts a couple of months after the suicide mission so that doesn't give Jack much time to grow long hair. If Jack does have hair in ME3 it needs to be short because hair would just cover her gorgeous facial features.
