I've been told Champion/Templar. Sound viable? Also, how's Reaver, and is there a way to unlock it OTHER than siding with the dragon cult? I heard something about a random encounter?
Best specs for a 2 handed warrior?

Not sure who told you that combination but if your going 2h warrior you cannot leave out berserker. champion/templar is better suited to a SnS warrior tank.
Reaver is really good for any of the warrior builds and as far as i can remember the only way to unlock it is siding with the cult its been so long since i did it i cant remember, once you unlock it its available for all subsequent playthroughs

Just save your game before adding the dragon blood and then load that save after unlocking Reaver.
I think that Templar/ Berserker or Reaver would serve a two-handed warden better but I don't play warrior much so... take that with a bit of salt.

Champion is the best 2H spec because it gives you some valuable crowd management, as well as a very nice buff with Rally. Max out the Champion branch of talents, and War Cry will become one of your most valuable abilities.
For a secondary spec, I recommend Templar.

I'm with BigBad on this one. Champion is the best specializations by far for a 2h warrior. War Cry is a cheap knockdown with a resistance check based on strength. When I play 2h, I use 2h Sweep and War Cry combined with Stunning Blows to avoid geting hit. Works surprisingly well.
Second spec can be anything really. Templar gives you a more expensive knockdown-ish ability based on willpower (sadly) and the ability to wear some spell resist gear. So in my mind it's mainly for the spell-resist. Reaver is perhaps a bit helpful early on, but really it just doesn't seem all that great to me at all.
My second spec so far has been berserker. But only for the passive bonus. Berserking is a big stamina drain for very little gain for 2handers. Maybe on the xbox where upgraded Berserking actually gives you stamina regen it would make sense (I *think*, I do not have that version). But on the PC, I wouldn't use it.

Holy Smite may be based on Willpower, but I seldom have it fail even though I never raise the stat. It's a great go-to crowd control. Berserker is ok, but remember that the damage bonus is just a flat increase per swing. Is it important to you to be able to hit for 108 vice 100? You decide. The health regen is handy. Reaver gets a heal and another stun. Really, they're all fairly useful when you get down to it. Champion is kinda the default one I just always take, though.

Well the reason I'm not so interested in Holy Smite is that it's also more expensive than War Cry and has a longer cooldown. So if that's my only reason for taking templar, I don't want it. I prefer not to play with the spell resist armor as well. I find it to be almost cheating to be near-immune to spells.

I suppose. It is an expensive spell, but I normally open a fight with it if I use it at all. The fact that it doesn't require a line of sight is another plus. Agreed on the spell-immunity thing. I avoid builds that involve extreme dexterity levels and high armor for the same reason... characters should have weaknesses. Indestructibility is boring.

That's what I like about 2h warriors in the first place. They die very easily if played incorrectly, but they have the potential to survive so much more. It's one of the character builds where your own input matters the most.

IMO you can't really go wrong with champion/templar.
With champion you can decrease enemies stats, buff your attack and defense and get cheap knockdown talent. What's not to like about that one for a 2-H?
And I just like the templar one. Good mental bonus and a talent to remove spells so that a mage isn't the only one who can do it is something I like.
