I know SR from removable items don't stack, but does permemant SR stack. Say, I'm a level 30 Drow monk. would I have a SR of like 81 (if my math is correct... 11+Character level+40 from Diamond Soul)? If it does, he might as well be immune to magic... even my ultimate Wizard (5 Wiz/7Eld Knight/8 Arcane Scholar/10 Red Wizard with a spell pen of like 50 for a Wail of the Banshee...) couldn't touch him

No, they don't stack. However, natural SR stacks with epic SR feats (13 Monk needed). I haven't made the calculations, but I think the max is about 60.

Your "ultimate Wizard" has a strange level split, but that's another thing...
