I just beat the Harvester last night on Hard difficulty using my tank rogue (high hit points, high AC).
It actually went pretty well; the Harvester largely ignored my companions in favour of beating the crap out of me, which is what I wanted. I used Brogan and Jerrik to take down any low-ranking skeletons and used the switch trick to eliminate boss-level skeletons while Snug and I kept attacking the Harvester.
I also kept the golem from getting into melee combat and kept it on standby, using it to heal my comrades and occasionally fling some lightning. Thanks to the liberal use of health poultices, I managed to get through the fight without any casualties.
Note: I'm on the XBox 360.

I was able to beat the Havaster on hard due in part to a glitch. When I fought him in his second mode, for some reason he'd jump from corner to corner for about 10 minutes. That gave me the time to kill all the soldiers and shave off a great deal of his HP.
