I finished the game and chose to keep playing after the storyline finished so that I could explore everything around the galaxies.
Am I able to start a brand new game from the main menu and not screw up my existing (completed) game?

Yes, every character has a separate set of saves.

If you have more than one character, the load game -screen has a switch career -option which lets you pick another character.
