is there anyway i can save the Council?

Yes, you get the choice at the end of ME1, save the council at the expense of human lives or back up the human fleet and go for Sovereign in that moment.

It changes some dialogue for ME2, but not much. It may or may not have a bigger effect on ME3 than it did on ME2.

but it seems like it would be a big deal since the they died and the human race is now the head in charge of the council

You should save the council solely to see the most famous thing on ME forums: The Turian Councilor's air quotes.

It's a personal thing. I like the dialogue that comes from saving them... but that's because I support galactic diversity. If you are pro-human then by all means don't save them. Or... from a strategic stand-point.. it made more sense to hold off and put everything you had into Sovereign. We won't know till ME3 if it is better one way or another, the council plays very little role in ME2.

Well, I prefer saving the Council, and the dialogue in ME2 changes with either saving them or not.
I suggest having two different imports to experience the differences for yourself.
And make sure to note the time stamp, to distinguish between them for ME2 with your second run.
ME 1 makes a new save each time you complete that section of ME.

When I first beat ME1, I was given the choice to save the Council or focus all the Alliance forces on Sovereign. I was playing paragon and I thought to myself, "Though I'd love to save the Council, I have to consider the greater good. This is the entire galaxy at risk if we don't put Sovereign down, so we need all our strength focused on him. Sorry, guys, but I'm putting the mission - and the good of the galaxy - ahead of my personal feelings here."
I let them die. Apparently, that makes me a racist and a renegade. I know this isn't terribly relevant. I'm just venting.

Just make another playthrough where you deliberately save them. Then a playthrough in which you deliberately kill them, and so on and on and on ...
Plowing through Mass Effect with every important mission on casual difficulty just to get more playthroughs you can import takes roughly eleven hours, not a big deal of time. And if you are worried about not hitting level 60, just add the remaining XP before the final endfight with the use of the console. That is how I did at least four of my planned import playthoughs. It is well worth the time spent ingame, if not only to replay this great game.
