For my main Shepard, I romanced Ashley and stayed true to her. For my FemShep, I romanced Kaidan in ME1 but ditched him for Thane in ME2.

ME2 = no one ... mostly because FemShep's flirty voice actually makes me cringe more than MANSHEP's ... and his flirty voice is terrible.

ME2: Tali, mostly because I wanted the achievement ... I'm probably going to romance no one on his insanity playthrough.
By and large, I don't really like the Mass Effect romances as much as I might otherwise. I like Kaidan, and I actually do like Jacob/Thane/Garrus, but I hate FemShep's leer-voice (and Thane and Garrus are TOO alien for me to take seriously, omg I'm a racist!). And for the ladies, the Leer Cam on Miranda made me feel like a sexual predator, so I rejected that romance, Tali feels a little gross because I think of her as more of a little sister, and Jack is just ... broken. I love the character, but she is BROKEN, the last thing she needs is a dude complicating matters.

I romance all of the male romances except for Jack at some point, will probably remedy that soon.
Not all in one playthrough mind, I've always stayed faithful to a LI in ME2. I basically dumped Ashley because of Horizon but am hoping for a redeeming romance like LotSB.
Same with Liara until LotSB. Never really connected with her in ME1 so when I had the option I went for Tali.
Everything up to the actual romance scene with her was great but as of now I'm still holding out for Mrs. Right. Hopefully Samara will be an option come ME3, I'm making a completionist game just for that possibility where I don't romance anyone.

Cole Shepard romanced Ashley in 1, but felt pissed by Horizon so he went with Miranda.
Tim Shepard (Main Male) romanced Ash and stayed with Ash.
Both the guys are Paragons
Lita Shepard is a Paragade and romanced no one in 1 and Thane in 2.
Amanda Shepard is a renegade and is only soft around Liara who she stayed with through both games.
