I'm glad you asked this question. The simple answer is that everyone who plays the Mass Effect games is a human (self-evident), and as I stated in the OP this is an appeal to those of them who are motivated by a perceived shared stake in the outcome of the Reaper invasion of Earth (forumgoers like to use the sacred word 'immersion') because in the game Earth is the homeworld of the human species, as it is in real life (again, self-evident).
The in-lore answer is because Shepard is a human (I wouldn't be making 'We Are Cousland', 'We Are Dalish', or 'We Are Orzammar' posters for Dragon Age Origins because of the different ways you can play the game; for good or ill, the *only* way to play Mass Effect is as a human), and it is humans who must be prepared to defend Earth. All we know about Mass Effect 3 at this point is Earth will be invaded by Reapers. This is a human concern, and it should concern any human that I know of--it should certainly concern Shepard. And since we don't know anything beyond this, it could very well be that preventing the whole cycle of extinction could hinge upon stopping the Reapers at Earth.
We might ask the turians or the asari to come to our aid, but
we must be prepared to do it without them in case the worst should happen.
The lazy reason is that including all of the human squadmates was already a ton of work. But I'm open to doing a similar, Citadel-themed poster in the future.
