I was in a situation where I could barely see the interrupt icon on the bottom right. I would of never known about it unless my friend told me about it.

Is there anyway to increase the size of it, or the sound that plays, some kind of indicator so I never miss them?

I really don't want to be focusing my attention on the bottom right of the screen the whole time I'm in a conversation.

If these icons are part of the texture file you could in theory alter them using Texmod. I have, however, no idea how you would do that.

You'd have to talk to somebody who's into modding ME2 who may know. However it must be said that officially ME2 does not support modding so you tinker with your game at your own risk.
