Actually, the history is surprisingly accurate. The court DID try to marry historical Balian to the Queen of Jerusalam, but not because Guy was a warmonger. Guy was a weak willed man controled by his mother and Ranald de Chatillion.
Onto the topic in question:
Before this turns into a Behlen vs. Harrowmont debate, if you look at what is given to you, without knowing the outcome, Harrowmont comes off as the guy you want to work for since, he himself is lauded as a decent and honorable man. Digging deeper makes you realize that he supports a system that is choking Orzammar militarily and socially. Which is where some of the awesome moral ambiguity comes in.
On the topic of running to the Tower for the Fade Ritual is tough. It makes sense to deal with it then and there since it's dicey to run off when the demon possessed Connor could do almost anything (this would have been a moment for a cut-scene where you leave some members on guard and then get the mages). However, the thing that irked me to no end was Alistair chewing you out for anything other than getting the mages. Its a total "I read the script" moment in the dialogue that made me mad.
I think the Ultimate Sacrifice is probably the "more noble" option for an ender, but then, in my "straight arrow good guy" game I let Loghain kill the archdemon because of the plea he made ontop of Fort Drakon.
