Humans, but I'm biased; then Batarians and Turians tie. I feel they represent the worst (Batarians) and best (Turians) of us which is why we have such conflict with them. With the Batarians they see us overcoming the same things that hold them back, their Violence and Anger. With the Turians they see our potential but also our darkness and they don't trust it. But because the Turians, they represent our Honor and Trust, it's easier for us to move past our differences. Just some thoughts.

Ok, I know this is not what you asked but I'm going to say that I really like the races they came up with in general. Although some arre what people might (at first) be tempted to call stereo-typical blue/green female aliens.... the fact that the asari are one sex with other cool backstory differences was really impressive. Also, the quarians were very well thought out and historied. Taurians are cool but possibly too war-like.... in a non-klingon/krogan way.... I liked how some of the races were linked like the salarians and the krogan and the quarians and the geth...
SO kudos to BioWare for all races. If I had to pick one I would pick the asari as being the most interesting.

Yeah kudos to BW for all races. Visually I think I like the Turians most, i'll never get tired of looking at Garrus' or Saren's face. Saren was particularly cool after all the mechanical implants.
I like the Volus quite a bit, and my fave "sideline" race (ie not one of the main central ones) is actually the Elcor, I'd love to see an Elcor crew member (not nesc, party member, but crew member) on the Normandy in ME3. I like how they speak their emotional/ tonal inflections because their voice is so monotonied and sounds so boring, when in fact its like that precisely because their interpersonal communications with other Elcor are so incredibly advanced.

I agree that they truly did manage to create intresting races, which is why I think I am drawn to the game soo much. It makes you really think what its out there.

I like the salarians. It's probably mainly that in each game we've only really met friendly ones that I can think of. Plus the fact that unlike most other races their life span is pretty short which makes them live fast paced lives.

Not really an answer but I really like them all, the diversity for a computer game is pretty astounding.
