Either Martin Sheen or Patrick Stewart, I think both would be excellent for a male mage. I also quite liked Claudia black in both Mass Effect and DA so I guess I wouldn't mind having her voice my femHawke. Also Jennifer Hale if she'd reprise her Bastilla accent.
