Just looking at the background on the left behind Bethany and Carver, it's totally different in the live demo chat and the first public demo playthrough. Behind Carver, the double-doors (if that's what they are) appear to different than the ones in the Bethany version. Also, the pilasters next to the doors in the Bethany version are compelety missing in the Carver version (if you compare the first two screenshots up top).
Considering that they're the same quest area, I don't think there would be such drastic changes unless they're different builds. Pretty sure they wouldn't change the architecture for two different characters - unless this subtle change is somehow related to Varric's storytelling (I assume that such is not the case however).
How can a woman look so hot on one picture and so, well, not that hot (still hot!) on the other ? I pray to god that with max settings the game will look more like the upper pictures >_<

Imho here eyes are like SOOOOOOOOOOOOO much bigger in the demo playthrough pictures
at this moment I´m praying to god we get the small eyed version in the final cut!

That's perfectly normal - the public demo had to be finished by mid-late January at the latest (even earlier if you consider the planned Gamestop exclusive) to pass through internal quality control and Microsoft/Sony cert. Mike's presentation was probably of the full game build, which still got all sorts of polish until the second it went gold.

Cassandra was probably changed after the demo went "gold" too. Developers always like to pretend that the last month is just fine tuning and super-polishing, but even major studios can make significant asset changes during the last few weeks.

Hm strange,
the narrator says that this is a press (preview?) demo version, he isn't sure about that either. He just says that he got it from a friend who works for some magazine or something.

Considering that Mike said something like "those doors are my favourite doors" during the Live Demo Stream, I go on a far limb out here and say you´re right, the demo version is not the retail version! So the Live Demo Stream is the final version, they wouldnt change his beloved doors (and the eyes), would they ?

To the devs:
would it be possible to play w/ a 'foreign language' audio, but subs for another language (say: French audio, English subs)?
(is this possible w/ DA:O? I just checked the configuration thingy, and only english is the option for dialogue and subs)
If not, could the appropriate language pack thingies be released in the future? (kinda like what was done w/ the Witcher: it was amusing playing it w/ Polish dialogue)

Exactly - to me it's not a biggie, but I thought it might be helpful for people to look at the very visible architectural details. It seems a little easier to make an objective judgment based on missing pilasters rather than someone's appearance. Regardless of lighting, either that detail just is or isn't there. That, and I watch way to many home improvement shows - lol.

Exactly! And there are a lot of differences even in the background (the door behind Bethany/Carver) so the demo must have been from an earlier built while Mike played the real thing. What happened to Izzie imo is that she got makeup around the eyes, making them appear smaller. Look at this picture where she didn't have any makeup:
