I want to see Shepard display some weakness, he/she is a human and cannot be badass all the time.
And then, Shepard wakes up, and is on the doctor's table just after Eden prime where he accidentally bumped his head, and everything was a dream all along...
No, just kidding about the dream part. But after the LI (or another squaddie if there is no romance) having rescued Shep there could be a sequence where Shep wakes up in the medbay of some alliance station and can go find and talk to his/her squaddies (and get hints about the future), and then a final sequence where he/she gets to recieve the love of the people of the galaxy, I like the traditional, feel good endings..
I'm assuming that there will also be one ending where Shep sacrifices him/herself for the sake of the galaxy, but I really do want the option of a happy-ever-after-ending too.

Earth is a wasteland, heavy HEAVY losses within all races, some would would even be wiped out... A near tragic ending that looks almost bleak and hopeless, the galaxy being mortally wounded but still has a chance of surviving, all of your squadmates are dead with your love interest as a possible exception, and finally the Reapers are nothing but debri; scattered amongst the planets and cosmos.
If male, I can picture shepard with half of his suit ripped off while carrying his love interest in his arms... he's all beaten, bloody, and bruised and wander aimlessly in despair on a blasted Earth until refugee ships come to take him and his LI. If shep were female, the opposite would be happening; her being carried away by the LI, lol.
I can also see the citadel being destroyed completely. Or the mass effect relays just stop working, and all of the races would have to find some other means as travel... distanced and alienated from each other for a long time.
Oooh, I like this one too...

MaleShep staring out at the starboard side of the Normandy looking at the remains of Earth. Liara walks up next to him taking off her helmet with a scorch mark on it.
Liara: Shepard, its finally over. We can...
Shep: I know, go home and start a family. You and me.
Liara hugs him with tears of joy.
Then an explosion, the xbox blows up, the disc gots shot out on fire and sticks in the wall. And the words, Game Over appear on the screen.
That's an ending.

Although it was touch and go at times, the homeworlds still stand.
The Council survives, but recognizing their part in the devistation, they are humbled. Although they are considered heroes by many, they know the otherwise. The Turian Councellor resigns his post. For his part in dismissing Shepard's warnings, Udina is voted out of office. Labelled 'the new Benedict Arnold,' he never serves in politics again, nor even in the private sector.
The Spectre program is completely rebuilt, with a new director to provide direct oversight and an emphasis on teamwork rather than purely solo ops, reducing the risk of rogue agents. Shepard is offered the post of director. The Spectres become a fully funded intelligence agency rather than merely a group of blindly trusted operatives.
With the death of TIM, Cerberus collapses. On Shepard's recommendation, recovered Cerberus assets as well as some of the personell are incorperated into the Spectre program.
The Quarians finally come to their senses and recognize the Geth as equals. The Geth allow them to resettle their home systems. Ironcly, the Quarians find that their bodies have changed over the centuries of living in space. Although some go into denial, accusing the Geth of having sabotaged their worlds, they slowly re-aclimatize,eventually finding peace.
The Krogan realize what they accomplished despite the genophage and are again recognized as a great heroic race. Although there are still those who long for what they might have accomplished without it, the majority accept the genophage openly as a chance to prove their true prowess, fulfilling Okeer's dream.
The Terminus systems finally unite into a cohesive political unit under Aria. Despite their criminal origins, they remain an example of racial cooperation that puts the Council to shame, although this will not be realized by scholars for centuries.
In the years to come, there will be new threats and challenges, but for now, civilization is at peace, licking its wounds and looking with hope towards the future.
Shepard stays on as a field agent for many years to come, prefering the stars and adventure over any desk job, but eventually he too slows down and takes up the post of Director.

As for the happy ending bit, I guess I could see the whole marriage + little blue children thing being appealing to my canon Shepard, but I can't imagine him settling down. If Shepard survives, he/she would continue to take a very active role in the fate of the galaxy.
An option to work with the Reapers for whatever reason just to have a truly negative ending would also be pretty awesome.

For a Paragon ending I'm kind of fond of the "Ultimate Sacrifice" ending. Not just Shepard dieing all the races dieing.. Reapers have been kicking ass.. the last known sentience life is held up on Planet X -- ready for their last act of defiance. Shepard and Co find a way to take out the Reapers -- but it will cost everyone's life. (blow the galaxy up or something when they approach to wipe you out), but you save the next batch of life.

TIM turns out to have a goal of using Reaper technology to become the 'man behind the throne' in control of the entire Galaxy, intending to use Shepard as a martyr, and then fake Cerberus being destroyed while operating a 2nd organization that takes much of the credit for defeating the Reapers and destroying Cerberus. Shepard follows the trail of agents sent to kill him in order to find out TIM's plans for defeating the Reapers, and has an epic argument with TIM before fighting and killing him (TIM doesn't suicide like Saren, instead he just gets frustrated and angry at your accusations, using the excuse of his plans being best for humanity). Shepard kills TIM.
Rachni aided you in the fight against the Reapers, after you managed to get your hands on some kind of anti-indoctrination tech or something and stop some indoctrinated Rachni. The Rachni join the Council races after the war.
Krogan genophage isn't cured. Instead, the Krogan race essentially dies a noble death fighting in the Reaper wars against whatever Reaper ground-units there are, like husks and such, in various battlefields across the Galaxy and on Tuchanka. Not enough Krogan survive the war that their race is likely to survive at all, but the few surviving Krogan are not particularly upset about this. Wrex notes that the Krogan are made for war and conflict, and could never have been happy in a peaceful Galaxy that it looks like might appear eventually in the aftermath of the Reapers' destruction. There will be lingering smaller conflicts for the remaining Krogan to keep themselves entertained until a greater peace is achieved, but the Krogan who died in the war, died as Krogan, for themselves, in battle, not as some tool of the Salarians or Turians, or as a mad, out of control mob they were in the rebellions.
Shepard manages to broker the start of an alliance and lasting peace between the Geth and the Quarians, although it takes the death of some remaining political opponents amongst the Quarians and some remaining Geth heretics. The Geth protect Quarian non-combattants on the Quarian homeworlds while their combined fleets engage the Reapers with shared technologies. In the aftermath of the war, the Quarians get their Embassy back on the new Citadel, and the Geth become a Council race.
The Salarians and Asari are both successfully recruited to help save Earth from the Reaper fleets, if with difficulty convincing them that it is better to combine forces, and following down some red-herrings about defeating the Reapers they send you after. They remain Council races with humanity, although the Turians are no longer on the Council, they do have a Citadel embassy on the new Citadel.
The Volus, lacking combat abilities of their own, and abandoned by the Turians who were supposed to guard them, had their populations devastated, and their homeworlds, those that weren't turned into Husks managed to achieve refuge by buying protection from the Batarians. The Batarians just turned them into slave-labor, but this lead to the Volus organizing a massive slave-uprising, which leads to the overthrowing of the Batarian governemnt structures, and the Reapers wind up wiping most of the Terminus systems out in the ensuing chaos. Some Volus do escape, mostly to the Hanar, Asari, and Salarian controlled territories. There are remaining pockets of Batarians after the war, but they are still warring amongst each-other, and likely even furthur than the Turians from becoming a Galactic power again, and are still dealing with slave-uprisings.
The Elchor turn out to have weapon designs comparable to the Klendagon weapon, which they utilize to defend their worlds against the Reapers. You have to save these weapons from sabotogue by Reaper agents, and they can't be used to defend other worlds or defeat the Reapers as they take too long to be built and aren't effective against whole fleets, the elchor worlds would be defeated quickly if the Reapers turned more forces against them, but are content to ignore them until they get around to dealing with them later since the Elchor aren't influencing the war much.
The Hanar find out about the Collectors, partly thanks to Shepard, and for the crimes of what was done to the Protheans, they wage holy war on the Reapers. It is awesome. They manage to eek by and become a new Council race after the war. They also finish curing that lung disease to help the drell, and have found some new planets for the Drell to inhabit, and it looks like in a few generations, the Drell might be able to gain their own Embassy on the new Citadel.
The old Citadel is destroyed in the war by the Reapers, who discover that it is being studied to figure out various technologies involved, and they have found a way around the defenses and Keeper programming preventing that before, and the subtle-indoctrination-like effects that prevented people from being too curious about it's operation and other aspects. They managed to evacuate much of the population of the Citadel aboard the fleets, and through the reversed conduit to Illos, and aboard the Destiny Ascension, before the Citadel was destroyed. The Keeper control center and cloning vats were studied enough that they are able to start a new Citadel by creating a new control center with non-reaper programming and a new Citadel design of their own, and hooking it up to a new Keeper cloning vat, and the Keepers start building it with the help of the Rachni and Geth, finishing a new Citadel in amazing time. The new Citadel is even more amazing and bigger than the old one, additionally, the Keepers are being used to dismantle and re-assemble the Mass Relays to a form that can be controlled properly, rather than controlled only by the Reapers with all sorts of hidden traps and such in them, and new mass relays or replacement ones are being created in many systems.
Earth has been devastated, but there are many survivors, and the Reaper presence has been destroyed, and Earth is being re-built, although it looks like many colonies will exceed it's population for a long time, there is actually something of a reverse-colonization effect of people returning to Earth to help re-build it. Humanity is a galacic power on the new council. Part of the reason they still have such a poulation left is their rapid colonization of so many worlds, they were actually one of the most spread-out races in the Galaxy, even if their population wasn't that impressive compared to some of the big dogs like the old Council races. Shepard's hard work has turned paragon Shepard into an icon for humanity's potential, and eased a lot of prejudice against humanity.
Shepard is made Captain in the Alliance, pardoned for any supposed crimes like the whole incident with the Arrival, and working with Cerberus, is given many awards, and placed in command of Specter Control, a new organization that controls Specter resources and activities and keeps better track of them for the Council, to ensure they are more accountable, and their intelligence is more organized and unified. FemShep marries Liara, and they merge the Shadow Broker and Specter intelligence networks for the greater good of the Galaxy.
Shepard marries Liara, and the epilogue shows them coming home from the office to a home on the new Presidium with a little blue daughter running up to greet them.<3

but i will like a choice where Shepard choose to sacrifice himself for his companions or sacrifice them instead (or even companions to chose to die at some point for the greater good or something)...i want drama and a grey ending ..i don't want a pure happy ending (that's utopia)

Pre-requisites:
Shepard HAS to kill TIM and dismantle Cerberus.
Of cours HAS to save the day.
Potential happy endings:
Ends immediately after the war, we see a close up of a dead husk (or other reaper supporter) laying on the ground, there is silence indicating there is no more fighting going on, we see a big heavy hard suit boot step on and crush the husk skull into the dirt. Then pan up, it's Shepard. Fade to black. A little cliche? Maybe. Not a lot of resolution? What happens to Cerberus? Alliance? Citadel? LI? Do we really need to know? THE REAPERS ARE GONE, that's pretty much problem solved. Whatever happens beyond that, life continues in the galaxy.
Shepard somehow sacrifices himself to save the Galaxy, awwww (tear). Sad yes, but epic! Or he can choose not to, and still save the galaxy, just at the expense of say a planet's worth of lives.
Shepard and LI survive and retire to a life of quite happiness on some serene planet (maybe like Eden Prime) after burying their fallen commrades. Some we love HAS to die, or this just will not be believable at all. So my dream ending is more of a realistic ending than a dream one. But also hopefully not a nightmare ending either... Or maybe a nightmare ending too as one potential version based on how the game plays out. Shepard saves the galaxy but looses everything. Or shepard saves the galaxy but looses himself AND everything, only LI is left to carry on his memory...
Oooh, that's horrible

At the end of the game, after the Reapers have been defeated and before Shepard can be brought up on any charges for his/her questionable...activities, I'd like to see Shepard take the Normandy, along with a few of the more loyal squad members (and LI, if applicable), and head out for the unexplored reaches of the galaxy.
Second star to the right, and straight on til morning.... unless you prefer to infinity and beyond?

Most of the Asari survive the war. Afterwards, they throw a huge celebration / orgy because they're happy to be alive. The event is so massive that it gives birth to the God of Pleasure.

After the final battle, the surviving races start to blame each other for the destruction of their home worlds but Shepard and his crew of many races step up and convince the survivors to put aside old hatreds and work together to rebuild the galaxy. The Citadel becomes the new "home world" for the new Galactic Alliance and Shepard is given the option of being the President of the Alliance ...
... but if you had a LI in the game Shepard turns down the new leadership role to relax on a beach somewhere with his/her love interest.
