The best way to avoid this habit is to use real dice to roll your stats by the rule of 3*6.
Make a character by rolling 6 numbers with three rolls each by three dices (3d6).
You will get something like 15 14 17 9 10 12. use any number for any stat. Like for warrior make your STR 17, dex 14 Con 15 etc.
I used real dices and a sheet of paper to have even more AD&D immension :)

Even more fun is multiplayer where you can AD&D all characters like that and *just go with it*. It will be fun. You will need all the strength potions, items and even spells which you never used before. BG characters are actually done like that, STR18 being really rare.

It will be a good challenge at your characters would matter more thann 6*18 monsters.

Of course if you wear that ring and then use the "Ugly stick" you can soon sell that ring and have a charisma of 25 as well. Or is that cheating?

That's a really good tip, thank you. Definitely would make BG feel more like a real pen&paper rpg.

For the perfect warrior with tutu/BGT just pick a half-orc with 19 STR and CON and go for the tome of CON+1 as level 1. I've made it with F/C and F/T. I will try it with pure fighter next time.

Edit: Since no spoilers are allowed I removed the tactic used in process.

Thanks for the tip. It seems pretty similar to many other challenges suggested in this forum - like the No Load -challenge. Sticking to a principle like this sure would bring more tension to battles in BG.
