A LOT of Sten's conversations are easy to miss, because unlike the rest of the characters that you recruit, you have to unlock pieces of Sten's dialogue by taking him to certain places in the game and having him randomly comment about it, whereas the majority of dialogue for the rest of your party is unlocked simply talking to them at camp or by approval rating.
For example, if you take Sten to the Circle Tower and have Wynne in your party, Wynne will tell Sten to stop flinching, to which Sten will answer that "...an unbound mage is like a wildfire." Afterwards, you can talk to Sten and ask him about what he's discussed, and he'll give you a lot of insight into how the Qunari view mages.
Another example is if you take Sten to Redcliffe. Right after speaking with Bann Teagan and leaving the Chantry for the first time, Sten will comment about human wisdom. Afterwards, you can talk to him and ask him about it, and he will again give you insight into how he and the Qunari view the Chantry and wisdom. This dialogue is really hard to miss because I think that he will only make this comment the first time you're in Redcliffe, and on top of that, another party member might comment instead.
If you have Zevran and Sten in your party, Zevran will get Sten to mention something about a group of Qunari who do not follow the way of the Qun, which then opens up another series of conversations with Sten.
The last one I can remember is Sten randomly commenting about kids in Denerim, which unlocks another set of conversations regarding Qunari children.
The first time I played this game I thought that Sten was boring because he hardly talked (I didn't bring him around that much because my first character's coercion was low and he disapproved of a lot of my actions), but the second time I played this game, I brought him wherever I went and found out that he's probably one of the most talkative members of your party, giving you tremendous insight into the Qunari (which is probably good preparation for Dragon Age 2).
