I'm just starting out in ME 1 and have a question regarding these 2. I will be playing first as male soldier and then as male infiltrator for my characters, and I wonder if it's necessary to have Garrus and Wrex for each, and what are the pros/cons if I don't take both? I'm planning to eventually import both soldier and infiltrator into ME2 if that makes a difference.

For ME1, don't feel pressured either way, it won't affect you. They each have a short personal quest, if you talk to them. Mostly you will be missing out on a bit of discussion. ME2 is mighty odd if you don't take Garrus in ME1 though, as the dialogue kind of assumes you've known each other for some time.

There's no harm in recruiting them. If you don't want to have them travel with you, then they can stay back at the Normandy. They both have interesting dialogue and backstories.
A soldier Shepard + Wrex + Garrus party isn't a bad setup at all.

It's just an option to leave them behind, though I always recruit everyone possible in every game I play, if just for the extra dialogue or "living scenery" at the party camp area.
Wrex and Garrus were my two favorite companions in ME1.
