I'm playing with these settings:
Resolution: 1600x900
Aspect Ratio: Widescreen (16:9)
Graphics Detail: Medium
Anti-Aliasing: Off
Renderer: DirectX 9
Play in Full-Screen Mode and Vertical Sync are checked, the rest are not.
My system specs:
Processor: Intel® Core ™ i7 CPU Q 720 @ 1.60Ghz (8 CPU's), ~1.6Ghz
Memory: 4096MB RAM
DirectX-version: DirectX 11
Video-Card: NVIDIA GeForce GT 320M
All of these specs are equal or superior to the reccomended specs (I checked at Can You Run It). The only issue I ever run into with my computer is overheating, and that's because I play on a laptop. That only comes into play when I push my system to the limit by playing for hours on end, though.
Funnily enough, I was able to play the demo just fine after I selected a Rogue instead of a Mage. Quite odd that a bug or error can be so selective.
A shame, really, since I would much rather experience Mage combat (beyond the exaggerated part) than Rogue combat.
In my case, at least, it has nothing to do with trying to play at max settings. It's far more likely that the demo is collaberating with the Chantry and hates the idea of me playing a Mage.
