Playing the PC demo, and I've made my way to the Fools Rush In quest. From what I've read there's more to the demo past standing outside the chantry door, but I can't get to it. The mouse doesn't show the ability to open the door, and I'm standing directly under the arrow for the quest, so what gives?

What happened is you looted the letter from the body before Isabela told you to. Since you picked up the item before the audio trigger told you to do it the Chantry door will remain locked. Unfortunately, the only solution to this issue is to restart the demo.
