All very true, but I think it can be helpful to differentiate between those who dislike change, and those who dislike specifice changes.

I don't think that it's the disliking change that anyone really has a problem with.
It's more the attitude people take about the change. You seem pretty respectful about both the [maybe] majority of new players who enjoy the newer systems, and you seem to understand the reasons for the decisions.
Your reaction to the changes isn't the common, the common one is...

Bioware can't please everyone and has to make decisions to please as many people as possible in order to maintain financial success.

The demo is fine, it's great to get the feel of the new combat, but I've skipped most of the conversations so I'm not familiar with it. I'll enjoy the journey more that way

Perfect example of nostalgia halting progress. Risks have to be taken at some point. Changes have to be made. I loved Baldurs Gate 1 & 2, but I finished those games a long time ago. I dont want to play them again. I want a new experience, a new way to play, and a fresh approach. Any sane, forward thinking gamer does as well. Have fun living in the stone age though. You shall not be missed.

All Bioware wants to do is make a game that will push boundarys and make their Fans happy of course! They do also do it for the Money but I would say from experience that Bioware is Loyal to its Fans and would never choose Money over their Fans!

Yeah well Final Fantasy 7 is probably my favorite game of all time, but I dont hold every other Final Fantasy, or any other RPG for that matter to some weird standard ive created in my head over it. Its unfair, and ridiculous for me, or you to expect the same tingly sensation we got in the old days. You move on, and find other things to be excited about in what is in the here and now. Either that, or you end up stuck in the past and bitter for no good reason.
