Depends on the person. Some people like staying way back and popping heads from outside enemy range, some people prefer to get in the enemies' faces for more high-risk, high-reward kind of stuff. Only way to find out if it's fun for you is to try it.

Honestly if you REALLY want to snipe, I would actually recommend playing Soldier with Widow selection (on the collector ship). You get access to a more versatile arsenal, and the damage is better and easier with Soldiers Adrenaline Rush ability.
Infiltrator should be used as the class name itself implies... to "infiltrate" behind the enemy (or flank) so you gain a better position, or literally can put a shotgun 1-inch from the face of an enemy, and blow him away (all guns except snipers gain 100% damage at melee range).
If you use Infiltrator as a "sniper only" class, I think you'll come away relatively unimpressed, because truthfully the "tactical cloak" is best used for battlefield movement and positioning, not just high damage long range sniping. Think of using tactical cloak, in a way that Kasumi does, you get close, throw an elbow (to stagger enemy), then blast away, maybe take down another enemy and then quickly take cover, wait for good opportunity to strike again, cloak, approach enemy and repeat.
I'm not saying you cant snipe with the Infiltrator, in fact I highly recommend you "thin the heard" early on in a wave of enemies by picking off 1-3 guys, then cloaking, approaching for better cover/position (there is also a mid range damage bonus for weapons), and then decloaking and firing away at the last few enemies.
The Soldier class gets better use out of long range shooting, the Infiltrator gets its best use out of complete battlefield control. When you play the Infiltrator, looking for the best points on the battlefield to shoot from (either on the enemies flank, or high ground), or simply sneaking behind the enemy entirely should be key tactical aspects in playing the class.
Its a fun class if you dont expect it to be a sniper only class, if thats all you're planning to do with it, I think you might end up a bit disappointed, hence my early suggestion of playing a Soldier with the Widow/Viper (which is really the best Sniper class).

That, and they get Incinerate. Seriously, that is one sexy power. It helps that sniping actually allows you to hit enemies farther away than you normally could if you don't want to waste ammo but still want to annihilate that distant enemy.
Sure, you won't get as much maximum damage with the same sniper rifle, but who cares? You are going to hit much more consistently without bothering with all that Adrenaline Rush thing.

Same here. The soldier is definitely a better combatant than the infiltrator but I've never understood why people brand it a better *sniper*. As you say, they get a similar slowdown ability but the Infiltrator actually has the ability to *guarantee* that they won't get shot when lining up their headshots.
I don't get it. I certainly felt it made a better sniper than the soldier for that reason.

In terms of pure damage, the Soldier is the better sniper. However, with the natural time dilation with Sniper Rifles and the Cloak ability, the Infiltrator is a far more natural sniper.
I think calling either the Soldier or Infiltrator a "better" sniper than the other is dependant on how you define "better".

Engineer snipers can easily dominate the long range game, imo, due to drone-sniping shenanigans.

Of course when you're not one-shotting things, soldiers can do more damage. The cooldown on Adrenaline Rush is also shorter than Cloak.
But it's certainly not a universal truth that soldiers are better snipers.

My setup and playstyle is like this: Charge and SG's of course, Viper to strip defenses from afar then use Pull to expose them and Locust for mid-range and some Pull-Slam combo's just for lolz. Granted snipers on a VG makes for a bit of a niche build but it is one that I've thoroughly enjoyed.

Adepts and Engineers can get pretty close with Singularity and the Drone.
If you like Close Quarters Combat, CQC, then either class can be very fun and forgiving once you have an idea of how to best use the powers.
Adepts can really control the battlefield with their biotics, and warp bombs are fun to watch. I'd suggest checking out this thread for Adepts: The Power of the Adept
Vanguards, the bread and butter is Charge, but Shockwave and Pull are nice to use also. Shockwave on Insanity
For Sentinels they key seems more relying on Tech Armor and annihilating the enemy with your powers and weapons, up close and personal similar to the Vanguard and Claymore Soldier. Here are some Sentinel Videos on YouTube.
And if you go with the Sniper Rifle you can telescope you powers, I don't like playing like that, but that style can be effective.
