You can also mod the demo's xml configuration file to force back in the video options that were "taken" out.. and yep.. they will show under the video menu and are usable if you have a dx11 card and drivers. But the mods of the site are correct. DX11 isn't properly working and turning it all all will lag you to hell and back unless you machine is a best AND you drop the res to like 1280x800.. but at least you can see some of the nice dx11 goodies

Video Card: ATI Radeon HD 5600 Series (DX11 compatible) 

Am am I wrong in the assumption that I should be able to run the demo with DX11? Or has the ability to select the option been purposely left out of the demo? 

If you can't select DX11 in the demo you probably won't be able to select it in the main game either. Make sure you have installed the following update on your system as that's the one that enables DirectX 11 support on Vista SP2:

I have vista 64 SP2, and this update just says "this update does not apply to your system" and then does nothing.
