Anyone know where/how I can get the textures for various parts of the game? From my understanding the textures themselves are .dds files which shouldn't be a problem for editing but I'm not sure where I can find them in the game files/toolset.
Any help would be appreciated

Start with packages\\\\core\\\\data\\\\textures.erf and .... uhm.... (sorry, I'm at work right now and don't have the toolset here), ... there is a texture directory somewhere, with a "high" and "medium" subdirectory, if I remember correctly.
This should give you all the model textures.
In addition, the terrain textures are...uhm....somewhere else - somebody help me out here,, please.

Terrain textures are in packages/core/data_tools/toolset.erf
Specifically, they're prefixed by "ter_", e.g., ter_dirt01_d.dds
The suffix of _d, _s, _n, or _h indicates whether the texture is a diffuse map, spectral map(?), normal map, or height map.
