The problem isn't so much the removal of stuff (I only found one removal - "Cheek Shallow/Full and the otherjaw/cheek options aren't in same order as they were in the demo), but that using exact same sliders as I used in the demo creates totally different characters.
This is why I jumped on the forums! I wanted to see if this was just a PS3 thing or if PC players were finding the same things. I tried recreating a few Characters I saw the sliders posted for in this thread, but they came out looking nothing like from the demo. Oh, well. I made my guy how I wanted, with a few tweaks in the Mirror.

Indeed.
Having any kind of beard locks out most of the face options, so it should be easy to recreate.
Pick a preset (it's the first I think), and then pick the sideburns beard. Then find the right nose and adjust the eye height and such, and you'll get very close without any trouble.

It offers quite a bit of variety, but manages to make almost any face -- even some of the extreme ones -- look much more smooth and realistic than DAO. In DAO it was all too possible to have faces with weird creases and pointy bits because of the way the polygons deformed with certain face shape options. Here, it is effortless to make a really great-looking character.
