It could be interesting, and devastating, she is a good and loyal friend of most of my Sheps.
However it seems like a pointless death for the sake of drama only. I'd rather see some mad scientist use vorcha genetics or something and make them immune to disease.

I very much doubt that she would die immediately, which seems to be implied in your post.
Worst case is she dies later on in the game, but much later on. From Shepard's perspective, I would say as much as a day or two, depending on her immunological preparation for the mission.

Unless "Arrival" can't be completed after the Suicide Mission, it is very unlikely that the sacrifice will be one of the party members, since any one of them can die.
Even then, it certainly wouldn't be Tali: she's mission-critical. Legion can be given to Cerberus, and Kasumi is a DLC character. That just leaves Tali as the only squadmate who can make it through the vent shaft, and successfully hack the door. Sure, we could always sacrifice an under-skilled squadmate, but it seems unlikely that BioWare would force that onto us.

I'd assume it would happen like she's mortally wounded after a battle and asks Shepard to take off her helmet for her, and then you would see her face then before she dies.

This reminds me of the discussions back when KotOR was released. In SW universe, the cortosis weave melee weapons can resist lightsabers, and some fans said "if it's so strong, why not build armor with that material and technique?".
And now someone can say "if the visors on Quarian masks are invincible, why not build whole armors with that material?"
