Is there a mod out there that makes the dialoges pop up more often? It can sometimes go a loooong period in between conversations.
More frequent conversations mod?

You can use the Jason Compton Banter Accelerator component in BG1 NPC Project, but there is also a component in IEP Banters that allows you to choose the exact interval between interjections- from 1 hr down to 15 min, I believe. BG1 NPC Project will let you choose the interval also, but only with romance dialogue.
Be careful with the IEP component though because it will auto-uninstall all your mods down to where BG1 NPC Project would've been and then reinstall them all, likely with errors. Best to install the IEP Banter component on its own before BG1 NPC Project. Also might interest you is a component in BG1 NPC Project that lets you initiate the dialogue yourself.
Also keep in mind that the dialogue isn't so extensive that it lasts forever, and sometimes it won't advance unless you either come to an encounter trigger or advance a chapter (or perhaps level). BG1 NPC Project adds a lot... Then again I'm talking only of BG1...

Since there seems to be interested in this thread, I'll add that my experience so far with IEP and BG1NPC Project is that there is plenty of dialogue and it seems to arise a lot more frequently than once per hour- which is what I set my IEP component to. The Gavin NPC mod (or BG2 version) also gives you a general interjection timer (identical to the romance interjection components of BG1NPC Project) and is also producing conversation at a rate higher than once per hour. I'm wondering if, instead of timing from the moment the NPC joins the party, instead it starts timing from the game start, so that when an NPC joins fairly later on they suddenly unload a good deal their banter at once to be where they would've been. It may also be a matter of the mod trying to get the banter up to speed with the chapter given that the content of the banter does at times reflect the experiences of the PC.
Another way that- without an accelerator- the banter can pick up is simply to have mods that create interjection triggers at particular encounters (as do the main ones already mentioned plus the BG2 mod Banter Packs and, well, the rest of IEP) or that add extra dialogue through "friendship" or "romance" banter. I can't attest to anything with BG2 though yet, nor the following. For both BG1 and BG2 there are also "friendship" mods for Ajantis, Xan, & Coran from BG1 (scroll down at webpage), and for BG2 Yoshimo, Viconia, and Imoen (and plenty more I didn't get myself that you can find by browsing through the BG1 and BG2 NPC mods listed about halfway through at this site).
