I couldn't find an explicit answer for this neither in official manual nor in NWN2 wiki: what are the rules for (energy) damage immunity and vulnerability stacking? E.g. 100% cold immunity from one item and 25% cold vulnerability from another, what is the result, 75% immunity? Or 100% fire immunity from the Energy Immunity spell and 50% fire vulnerability from an item?

Whichever is the stronger of the two is the general principle, for stacking. (Stacking being defined as two things adding to each other, not subtracting.)
For things that subtract from each other, such as your 100% Cold Immunity and another that creates 25% Cold Vulnerability, that's a toughie. Initially I'd be inclined to say, you can't take cold damage if you're wearing/using something that provides 100% Immunity, even if you have something else being used that creates a 25% vulnerability. It seems like the stronger of the two items would win out. Although, depending on how the rules function (and I don't know if there *is* a clear answer in this) you might end up with a 75% Cold Immunity, having the Vulnerability magic sort of Punch Through the Immunity magic.
In PnP that'd be a DM call. Here? Depends on how it's coded. You'd have to experiment and find out empirically.

Well, I've conducted some cruel experiments on my companions using maximized Fireball and Cone of Cold. The results are interesting: damage immunity from an item does not override damage vulnerability from another item. So 100% immunity + 25% vulnerability indeed means 75% immunity. Damage immunity from the spell, however, overrides everything, so Energy Immunity (Fire) always means 100% fire immunity.

You sir, are a true Wizard Arcane. Driven not by the need to have, friends, accolades and prestige of society, no, not you. Instead, you will use whatever means is at your disposal to further your magical knowledge and acumen. If that means casting multiple spells on your trusting (and hopefully unsuspecting) Companions to those ends, so be it.
