Monk subclass. Give them kung fu melee, kung fu melee with a dagger, and kung fu melee with a staff. The hard part would be coming up with talents that make it stand out from the usual three.

Hard to say, I mean in my mind classic gang is mmo style Warrior, Rogue, Mage, Priest. Since Mage has healing in his branch no real point, and I don't think a summoning class has much use. It is a tough one, I mean if you don't want another warrior, mage, or rogue, it would have to be something newish.
Rather then that, I think it would be easiest to just break the specializations out into classes, and fully flesh them out. I mean that would be 9 classes, they already have roles, and special abilities, just make them classes, give them bunch of abilities, and then have prestige classes with in the specs.
So like you could break mage out into, Force Mage, Blood Mage, and Spirit Healer. You have your Control, Damage, and Healer class now and each can cast magic.
Just a thought tho, may not work.

Anything that casts magic in any way is a mage
Anything that holds a metal weapon is a warrior
Everything else, like bows and throwing knives is a rogue
All other names are just variations of the 3 above, Bioware just decided to not beat around the bush.
What other weapons are there? Only thing I can think of is a class that transforms into things to fight, but that sounds kind of lame and could still technically be a mage. Or maybe like a brawler or gunner (pirate like), but I definitely cannot think of 6 subclasses for a pirate.
Engineer was a good idea, except for the fact that a rogue has that job already (at least like the first 1)

I honestly think they've covered everything with the classic three they have. Anything other than those three and you have a variation or combination of the three. Though the only thing they're missing is some sort of hand to hand specialization, but really that's just a variation on two-weapon fighting, which the Rogue gets in Dragon Age 2

I think the classes are good already, but if I had to choose...
1. A dedicated shapeshifter class. Shapeshifting could have been cool in DOA if it wasn't so bad compared to other mage stuff. I liked the way that Shale's talents were arranged too, so if the shapeshifting forms could each be geared to a different playstyle.
2. Have you guys played the warden class in Lord of the Rings Online. Basically it was a tank class, who used a shield and spear, and threw javelins. The mix of melee and some light ranged attacks was kinda fun and would kinda work in the Dragon Age universe.

I want some sort of dedicated Necromancer or Summoner. Even if they just expanded the Ranger role, I'd be happy, as Archers and any sort of Summoners are my favourites.
