My answer to that question is usually Ultima IV, but John Epler has been making persuasive arguments in favour of Ultima VII.
Imagine if EA/Origin let Bioware make a new Ultima game how epic would it be.
Pity Britannia was destroyed along with Lord British and the Guardian in Ultima IX (disreguarding the shards of the gem of immortaility)
