I started a soldier last night just to unlock Assault Rifles as a bonus talent. That worked fine. I then deleted all saves to get rid of that career. In case someone asks, I deleted the saves from within the game, I did NOT delete the Save folder containing the profile file :)

Later I restarted Mass Effect to start an adept with AR as a bonus talent. But it was gone, along with all other achievements.

Is this something that happens at random or was it because I deleted the saves? I've played this game on the xbox as well and have done the exact same thing before with no problems whatsoever. But there's no way I'm going to play through it on the PC if my achievements can just disappear at random.

I've not seen this. It may be a corrupted profile file. If you really want the achievements back, use the console to add them in. Visit the mass effect wiki for details. If you consistently keep losing achievements (I had a friend on Vista who had a similar issue) then you must delete your profile file as it is messed up.

It was a new install actually. I had been using a "trash career" to just get the AR bonus talent. My guess is I corrupted the profile by deleting all the saves for one career so it would disappear. I deleted the whole profile manually and this time I kept the career used to get the bonus power. So far it seems to be working.

It isn't very reassuring though that you CAN delete your achievements through perfectly valid choices made in-game.

The profile has been buggy for me in ME1 a lot. I can only recommend you back it up frequently or use the Win7 "restore previous version" if necessary.

Sounds like your profile file got bugged, or wiped out by Windows. Consult the wiki on how to retrieve lost achievements using console commands.
