I like both and have tried both for a little while but never had fully played both classes
Which one is more fun on Insanity, Engineer or Adept?
Also which bonus power/weapon should I pick?

I personally like Adept better than Engineer, but that is a personal choice.
For Adepts Stasis is always good, barrier, warp ammo, reave, and dominate.
Engineer plays well with dominate, Geth Shield boost, reave, Stasis, ammo power, and neural shock.

For bonus powers it will greatly depend on how you want to play, what bonus weapon, and how you see your build going. There are very few BAD powers, yeah fortification is one of them for players, but there are playstyles that can get good use out of just about all bonus talents. Reave, and Stasis are probably the two most powerful and universally liked, but I personally don't like Reave, but many do. I happen to be doing an NG+ hardcore Shotgun adept with Stasis right now, and having a pretty easy time of it.

I can't tell you which one you'll find most fun on insanity. For me it was engineer but a lot of people will say adept I think.
For bonus powers, it helps to have some idea of the "theme" of your build. For example I'm making a CC engineer so I have Dominate as my bonus power. But have a look here. My personal suggestion is to grab Stasis for an adept and either Dominate or Neural Shock for an engineer.

As for weapons: With both classes it pays to go get the Locust from Kasumi's loyalty mission early. This is good for pretty much everything. I also like to use the Predator against armor. Doesn't hit as hard as other pistols but it's faster and more forgiving.

Good bonus weapons would be the Viper, Vindicator/Mattock or the Geth Plasma Shotgun. The regular shotguns are good too but are a bit harder to use well and are probably best if you're quite comfortable playing on insanity.

I had the most fun with an Adept but I guess that's because I liked to mess with the physics of it ... Throw, Pull, Warp Bombs, Singularity, etc. Looking around the board and checking out how you can make someone have a really bad day was cool.

IMHO the Engineer was the easiesr of the two classes to just sit back & walk through insanity. I didn't have as much "fun" with the class but it was a nice stroll.

Keep in mind that the CC you get from the Drone allows you to do more than just sit back. You can certainly sit back and kill people from a distance, but that's not the only way to play an engineer.

I found the Adept the most fun, but that's primarily because it suited my playstyle - plenty of nukes and physics effects made it a very sorcerer-style class, with the emphasis on annhilating everything in your way.

The Engineer is Wizard to the Adept's Sorcerer. Not quite the same horsepower in terms of crowd control and nukes but tended to have lots of interesting abilities that allowed him to slide through many situations. The Engineer tends to be a little more subtle.

Both make great tactical classes.

For Adept I found Stasis to rule the show, no question. It allows an Adept to simply select any enemy within view and completely remove their threat in a split-second. Great for taking the heat off your back and makes most boss encounters a formality. As for weapons, the Viper is my fave weapon in this game, so I took that. Sniper Adepts tend to get a lot hate on these forums, but near as I can tell it seems to be down to the whole power-zoom where your scope comes up briefly when you hurl a biotic power - but this is an aesthetic issue. It doesn't affect your tricks. And in return you get a powerful defence stripper with an almighty range, perfect for a biotic user.

For Engineer I took the Viper too. Worked great, although took a slightly different role on the Engineer - working somewhere between a traditonal sniper weapon to thin the herd at long range and a anti-boss gun.

I recommend playing Adept and Engineer - they're my most favorite classes in ME2. It takes some time for them to develop their abilities, but mid-game they're incredibly powerful and can lock down / disable most enemies.

I love shotguns, but you have to play risky to get the most out of em. Assault Rifles are always a solid choice. Sniper Rifles are tricky. They work very well on the Engineer (most powers are instant which helps), less on the Adept (all powers are arced). The major issue with SR is the zoom effect when you're using powers which temporally blocks battlefield overview. I don't like that, but it is less of an issue during mid-/long-range engagements.

Stasis, Barrier, and Dominate are great for Adepts (Energy Drain is nice too, but tech power). Engineers work well with Neural Shock, Flashbang, Energy Drain and if you don't mind biotic powers, Slam (to setup warp explosions with squad), Reave (when you want Shep to strip barriers) and Dominate to make the enemy self-destruct.

Here's a good test.

Which sports do you like more, tennis (Sniper Engineer), hockey (Shotgun Engineer) or American football (Shotgun Adept)?

I'm partial to Adept. It's my preferred class.

However, right now I"m at the tail end of an engineer insanity run. It is far easier than adept ever was. Not necessarily more fun, but spamming the drone makes most stages a cakewalk.

Shotgun Engineer is pure happiness. Provided, you'll be respeccing every other mission, but that becomes normal after a while.

Sniper engineer with

-Heavy Incinerate
-Explosive Drone
-Tungsten (AP) Ammo

is leathal as well. your AI Hack, Overload and Cryo will get changed a lot (ie drop overload to 2 pts every collector, ie main story, mission)

I've played every type on Insanity and I have a hard time picking a favorite. Between Adept and Engineer, I'd say do one, then the other.
For an Adept I'd max out Warp, Singularity and the passive. For bonus, I'd consider Reave or Dominate if you want to max it or take Stasis as a one point wonder. Then you can max Pull or Throw. Shotgun or AR are both valid choices for weapon training but I prefer AR for an Adept.
For Engineer, I'd for sure get Explosive drone and max the passive. You could take Energy Drain as a bonus and skip putting points into Overload and Incinerate but Incinerate is nice to have. I'd consider Neural Shock as a one point wonder. That way you can max Overload, Incinerate and Cryo Blast.
