Hi there;

do the grease traps catch on fire (after triggered, of course) when one casts a fire spell on them? and, Is that a chance on hit or a 100% chance?

Yes they do catch fire and it is 100% but the damage you take is small.
Note that animals and undead take extra damage from fire as a rule.
