During the first battle, the game freezes for ~10 seconds, then goes right to a blue screen, saying something along the lines of my video card timing out.  This has never happened during the demo on max settings.

Downloaded through Steam
Windows 7 Home Premium 64 bit (6.1.7600)
2 x ATI Radeon HD 4890 1GB running Crossfire (Driver version 11.2)
6GB RAM
1440 x 900 resolution
Widescreen (16:10) ratio
Medium graphics detail
AA off
DirectX 9 rendering, but can use DirectX11

Any thoughts as to what's going on?

That I do not know (or at least how to bring up while playing), but if sounds mean anything, I don't hear either video card's fan rev higher than what sounds normal.

EDIT:  At this time, I'm gonna try to install the 11.4 beta driver and see if this fixes anything.

EDIT2:  Update didn't work....blue screened on me.

"Attempt to reset the display driver and recover from timeout failed." is the BSOD message I get.

Sounds like a voltage problem. How powerful is your PSU (Power Supply Unit)?
