I place the scarecrow and once the arischok attacks it I start to attack him from behind. But after he destroyed the puppet he just kept standing there while I constantly stabbed him for minutes without any reaction from him. He kept using potions but eventually his health went down and I won the fight.

just me (2H Warrior) and my dog. I actually managed to get him down to halfway HP but then I
got dismayed when I saw him use the potions several times. This was after about 15 minutes
so deciding that this was probably another ARW-type bossfight, i went to ze intarweb for help.
Some guy on the gamespot forum had a few simple tips; side-step all of his attacks, be willing
to KITE & spend up to 45 minutes on the fight, use your dog as a buffer, and have enough potions/talents to keep you alive for the 40+ minutes.
Following those tips I was able to beat him on my second try on Hard, made me feel pretty good. To sidestep you really need to use keyboard controls, rather than mouse clicking.
There was a LOT of running around which was pretty annoying to my fingers but whatever - I'm
used to FPS games. My dog really only diverted him away about 20% of the time, but that's better than nothing I suppose. The pillars are also helpful as a "barrier". And for potions, I actually only had 6 health, 2 elfroot, 3 restoration and used about 9 of them for the fight.
I didn't really need to touch my stamina potions because of Bolster
Only took about 35 minutes, was expecting an hour or so.
You might think this was an annoying fight (which it is) and that it lacks epic feel, BUT...
BUT...
BUT...
For those who read ASoIAF ... I believe the second book in the series, I am sure you will recall the duel between "the mountain that moves" and the Prince of Dorne (sp). From the way it was described, it played out exactly like this duel! The Prince essentially engaged in KITING, since he was very fast and dextrous, whereas the Mountain (forget his name) was an ogre-like man who moved very slowly. From what I remember, the Dorne guy essentially ran around the other guy and poked him every once in a while, but unfortunately he did get sticked a few times and so I won't spoil the outcome of that fight.
But basically, that fight had a very epic feel when I read it, so there's no reason why this fight can't be written as "epic" too.

did it with a rogue and a bow.
in direct fight he killed me with 3 hits.

Hit him once or twice, run away to dodge his crazy powerful attacks. Chug potions when he hits you. Time elapsed: way too much.
Before he is below around half health, if you run too far away he heals. A boss this annoying should not be allowed to heal. D:<

Petrify is your friend. And by that, I mean he has an ogre-like charge attack, that could kill my mage in 3 hits. Petrify can stop him mid-charge. Unless you switch to nightmare, chain lightning also does decent damage. Rock fist will never knock him down, but unless he is charging you, he will flinch whenever hit by it.
Of course, there really are only three possible reasons to do the duel with the arishok:
a) You want to figure out what this duel that everyone is talking about is really about.
c) Role-Playing reasons.
Otherwise, when he asks for a one on one duel to the death, you can tell him to ****** off, and fight him as a party.

On hard, he has 3 potions.
That said, unless you are into hurting yourself, or just want to see if you can do it, refuse the duel or go casual.

For those clueless, you get to duel the Arishok at one point. He is a dual-wielding warrior, who charges like an Ogre and occasionally sticks his blade through you and holds you up in the air with it. And does a ton of damage. Oh, and he uses health potions, too.
I thought it was another Ser Cauthrien fight. I finished nearly 10 heath potions and stamina potions trying to beat him on normal, accompanied by a lot of kiting, before I finally decided to give up and switch to casual.
Anyone beat him on Normal/higher?
As I said in another thread, it's really easy with a Mage (playing on Hard). I runned in circle and then throw him spells to slow him down or paralyze him: horror, winter grasp, gravity and cone of cold worked all very well. And then, spirit bolt, fireball and nasty autoattacks with cold blooded. Yep, it does not feel epic to do a lot of kiting, and it takes time. I have to drink a couple of stamina potions and 3/4 health potions (but he drank them too, so it does not feel to cheat).
I don't know how I would handle the battle with a 2H. I think that I will use hit & run tactics using my powers but he's pretty deadly if you stay near him.

I did it by running up to him and when he drew back his arms, I paused the game. Then I had my rogue move to a spot behind him. The Arishok takes time to finish his attacks and most of them are directed in front of him.
This gives me time to get behind him and after the attack he can't move for a while. I could get in 5-6 attacks before he turned.
Then repeat.

Oh, and I was using a poison to lower his speed... combustion grenades also stun him, but I only had 2-3...
It was a very tedious fight, but satisfying when he fell. I had ONE potion left... I would have been so angry if I'd had to redo that.
Edit: Oh, and I never learned Bolster, so I had to rely on the six stamina potions I'd brought along... that also sucked, but something tells me I wouldn't have had time to even use the skill before he started attacking again...

Unfortunately the only way I found to beat him with a warrior was by hitting&running. He is too good in a stand-up fight.

I had tank, archer and two mage. When the real battle begings, I move away from center to one of the side in main lobby, out of sight. So, that all enemies are forced to come to us. Then both mages cast firestorm in the middle of stairs or front of it, where the enemies are comming. While my tank wait's them around the corner. Of course you can't allow you companions move freely, so you need to disable that. After that I just killed everyting what did come down to fight with range attackers. Untill the main enemy also did come and I left that for tank. So when all little ones where done, Then I just let base attacks kill the leader, while tank was tanking.

also i wasn't able to duel him as i never use isabela nor fenris, a shame that i didn't...
With a 2H warrior, and merril/anders/varric, just popped haste, kited all of the adds to a same area then AoE'd and killed them all leaving me alone with the arishok, and he just used 1 health potion in my fight, don't know why all complain about him using a lot of them

He did surprise me when he impaled me and lifted me up. I was at 100% health and it was nearly an insta-kill. I was more careful after that

Ideally, the 1-on-1 version would be with a weaker version of the Arishok with no potion use, with skills scaled such that a toe-to-toe fight is difficult but doable. Include cinematics at 2/3, 1/3 and 0 health, so that even if the Arishok heals up a bit, it's clear to the player that progress has been made.
