Which companions do I take so none of them turn on me or do I have to lose 1 during that part of the game?

You don't lose any, they just get some rivalry points.
But I'd say take Aveline, Anders and Varric.

When I go into the guys desire part the demon turns one of the m against me, but they rejoin me after I defeat them?
