Like, every crate I opened up has a new junk item, taking up more room. This needs improvement.

You cut down drastically on dungeon crawling when you dont have stuff to pick up.

Just so that people have something to sell? I guess it's more realistic than just finding gold everywhere.
Which is funny, because you find both junk and money everywhere.

IMO, the only thing that needs a change is: Autosell (disable from options of course) junk when visiting a merchant and junk doesn't take up inventory space. Actually, space that concept (pun intentional...) for real. Unlimited inventory or fixed max limit, better that way. Or maybe inventory limited by party member strength average?

Why have useless items at all?
Vendor trash. It's a slightly round about but limited way to add to the player's funds.

But... Why not make the vendor trash into one item? Or simply hand out gold?

except with the generic two-tone icons everything of like category share due to laziness in not created at least a FEW unique icons....you're point is invalid. Not to mention there's practically no "inspection" text like at least a few items in DA:O had.
