So I encountered a normal qunari called "Sten" and I was like "CAN IT BE?!!! noes, I killed him :'(" but then I find ANOTHER NPC called "Sten" why make illusions (jk) but why are the so many NPC's called sten?

Because it's a rank and not a name.

Sten even says this in Origins.

It's a title and or rank, not a name specifically, as I understand it. Like Arishok and Saarebas.

This tricked me at first as well. But Qunari name themselves after their role in society. They don't have indidvidual names, they are their role.

Because "Sten" is actually a military rank within the Qunari system, not a proper name as we would like to think of them. Qunari refer to themselves by their rank and don't have personal names - their full names are actually more like genealogy charts according to the writers than anything like "John" or "Grace". Even Sten from the first game never gave you his full name, just his rank, because that's how things are done in his culture.

I found it funny that they all were sword and shielders. I guess a "Sten" with a 2 hander would have confused people...

I think Qunari don't have names, just roles in their society. I don't think they have families as we know them either. They have qunari who are tasked with breeding and probably such that are tasked with raising them to proper Qunari.

I think it's kinda cool that the entire time I'm calling Sten, well, Sten, in Origins, that I was really saying something equivalent to "Captain." It makes me think Sten got a sick sorta pleasure out of that. Afterall, he doesn't tell you until late in the game, or at least when you get his companion quest.
