There's sort of a golden arrow that appears above their heads. It's the same symbol that you see when STAGGER is mentioned on the talent tree screen.

seems to be the visual I get to see from my rogue being attacked by a warrior every once in awhile.

You need to turn on the additional visual cues in the Interface options if I'm not mistaken. It's in the same option menu where you can turn on/off the damage numbers showing up. This will also show things like Brittle, Disorient, Resisted (spells or whatever), etc...
