So I played as a Mage in part due to wanting that badass Mage gear in all the promotions. But ending the game I only had the gloves and the hood. Did I miss something, and how do I get the boots and body?

The main body you get from killing the High Dragon in the act 3 "Mine.."-something quest, the one where all the workers in the bone pit were killed by said High Dragon. The boots you get in the quest where Meredith sends you to kill 3 blood mages, one of whom is called "Huon" or something of the sort; he has the boots.

The Champion parts:

- Hood of the Champion: Grace (The Wounded Coast, Best Served Cold) - Act 3
- Gloves of the Champion: Quest reward (Demands of the Qun) - Act 2
- Robes of the Champion : High Dragon (The Bone Pit, Mine Massacre) - Act 3
- Boots of the Champion: Huon (On The Loose, Lowtown – Night) - Act 3

Funny, Huon didn't seem to have the boots when I killed him.

Sure, you didn't loot the Boots when you killed Huon ?!
I just killed him a couple of hours ago and it was from him.

For the Dragon, you need a good preparation, it is not that hard when you are fighting it on the ground, but when the baby dragons come and it shoots you with homing fireballs, here comes the hard part. If you are playing on Nightmare like me, I really wish you good luck
