Last names for humans are really only important to nobles. I think the Dragon Age tabletop RPG book said that human commoners rarely use last names.

It's interesting how some characters, though, get referred to exclusively by last name (such as Arl Howe, who no one ever referred to as Rendon).

Would you want to be called Rendon?

That's her nationality (she's supposed to be from Rivain originally), not her name.

I honestly thought Anders' last name WAS Anders.

Kind of like how everyone refers to Hawke as Hawke. So I thought Anders' first name was unknown.
